Moroccan Chocolate-Spiced Lentil Stew

A delicious Moroccan lentil stew full of warm flavors and surprising depth from chocolate. Perfect for cozy winter days and easy to prepare.Preparation Time: 30 minutes

Ingredients:
- 1 onion, chopped- 2 garlic cloves, crushed
- 1 carrot, diced
- 1 red bell pepper, diced
- 1 can (400 g) chickpeas, rinsed and drained
- 1 can (400 g) crushed tomatoes
- 2 dl green lentils
- 1 tablespoon olive oil
- 1 tablespoon harissa paste
- 1 teaspoon cumin
- 1 teaspoon cinnamon
- 50 g dark chocolate (at least 70% cocoa)
- Salt and pepper, to taste
- Fresh coriander for garnish
Instructions:
1. Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté until soft.2. Add carrot and bell pepper, continue to sauté for a few minutes.
3. Stir in chickpeas, crushed tomatoes, lentils, harissa paste, cumin, and cinnamon. Mix well.
4. Pour in about 6 dl of water and season with salt and pepper. Bring to a boil, then reduce heat. Let simmer covered for about 20-25 minutes, until lentils are tender.
5. Remove the pot from the heat and add chopped dark chocolate. Stir until melted and evenly combined.
6. Serve warm, garnished with coriander.
