Ingredients:
- 2 zucchinis
- 1 can of coconut milk
- 2 garlic cloves, minced
- 1 tablespoon soy sauce
- 1 tablespoon lime juice
- Fresh herbs (such as cilantro or basil)
- Salt and pepper to taste
Instructions:
1. Spiralize the zucchinis into spaghetti shape using a vegetable spiralizer or a peeler.
2. Heat a splash of oil in a pan and add the minced garlic. Sauté for a few minutes until fragrant.
3. Pour the coconut milk into the pan and stir well. Add the soy sauce and lime juice.
4. Allow the sauce to simmer on low heat for about 5-10 minutes.
5. Add the zucchini spaghetti to the sauce and cook for a few more minutes until the spaghetti is tender but still al dente.
