This delicious mushroom pasta is quick and easy to prepare, perfect for a weeknight dinner.
Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 300 g pasta (e.g., penne or spaghetti)
- 200 g fresh mushrooms (e.g., button or chanterelles)
- 2 garlic cloves, chopped
- 1 onion, diced
- 2 tablespoons olive oil
- 100 ml cream
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
- Grated Parmesan cheese (for serving)
Instructions:
1. Cook the pasta in salted water according to package instructions until al dente. Drain and reserve some pasta water.
2. Heat olive oil in a large skillet over medium heat. Add the diced onion and garlic, sauté for about 3-5 minutes until soft.
3. Add the chopped mushrooms to the skillet and cook until golden brown and the moisture has evaporated, about 5-7 minutes.
4. Pour the cream into the mushroom mixture and stir well. Let it simmer on low heat for a few minutes until the sauce thickens slightly. Season with salt and pepper.
5. Toss the cooked pasta into the mushroom sauce. If needed, add a little reserved pasta water to help the sauce coat the pasta better.
6. Serve the pasta on plates and garnish with fresh parsley and grated Parmesan cheese.
