Serving Size: 4 servings
Ingredients:
- 200 g fresh salmon- 2 tbsp olive oil
- Juice of 1 lemon
- 1 tsp salt
- 1/2 tsp black pepper
- 200 g green beans
- 150 g cherry tomatoes
- 1 avocado
- 2 tbsp fresh basil
Instructions:
1. Preheat the oven to 180°C (350°F).2. Place the salmon fillet in a baking dish and drizzle with olive oil, lemon juice, salt, and black pepper. Bake the salmon in the oven for about 15-20 minutes or until cooked through.
3. Boil the green beans in salted water for about 5 minutes until tender-crisp. Drain and rinse under cold water.
4. Cut the cherry tomatoes in half and slice the avocado.
5. On a serving plate, arrange the baked salmon, green beans, cherry tomatoes, and avocado slices.
6. Sprinkle fresh basil on top before serving.
