Ingredients:
- 400 g pasta (e.g., fusilli or penne)
- 2 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 1 red bell pepper, diced
- 200 g cherry tomatoes, halved
- 150 g spinach
- 150 g feta cheese, crumbled
- Salt and pepper to taste
- Fresh basil for garnish
Instructions:
1. Cook the pasta in salted water according to package instructions. Drain and reserve a little pasta water.
2. Heat olive oil in a large pan over medium heat. Add onion and garlic, sautéing until soft.
3. Add the bell pepper and cherry tomatoes to the pan. Cook for about 5 minutes until the tomatoes soften.
4. Stir in the spinach and cook until wilted.
5. Mix the cooked pasta into the vegetables. Add a little reserved pasta water if needed to prevent dryness.
6. Season with salt and pepper. Fold in the feta cheese.
7. Serve garnished with fresh basil.
