A fresh and vibrant salad featuring tender okra, colorful bell peppers, and cherry tomatoes. Perfect as a side dish or light meal.

Serving Size: 4 servings
Ingredients:
- 200 g okra
- 1 yellow bell pepper
- 1 red bell pepper
- 1 cucumber
- 100 g cherry tomatoes
- 1 red onion
- 3 tbsp olive oil
- 2 tbsp balsamic vinegar
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
1. Rinse the okra and cut them into about 2 cm pieces.
2. Boil the okra in salted water for about 3-4 minutes until tender yet still crisp. Drain and cool.
3. Peel and chop the red onion, yellow and red bell peppers, and cucumber.
4. Halve the cherry tomatoes.
5. Combine all the vegetables in a large bowl.
6. Add the cooked okra to the vegetable mix.
7. Mix the olive oil and balsamic vinegar together, seasoning with salt and pepper.
8. Pour the dressing over the vegetables and toss well.
9. Garnish with fresh parsley before serving.
