Ingredients:
- 300 g okra
- 1 onion
- 2 garlic cloves
- 1 bell pepper (red or yellow)
- 2 tomatoes
- 1 dl vegetable broth
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
1. Rinse the okra and cut it into 2-3 cm pieces.
2. Finely chop the onion and garlic.
3. Heat the olive oil in a skillet over medium heat. Add the onion and sauté until soft.
4. Add the garlic and bell pepper, and cook for a few more minutes.
5. Stir in the okra and tomatoes, mixing well.
6. Pour in the vegetable broth and season with salt and pepper.
7. Let the stew simmer for about 10-15 minutes, until the okra is tender but not overcooked.
8. Serve garnished with fresh parsley.
