Okra Curry with New Potatoes and Lentils

A simple and delicious curry that combines okra, new potatoes, and lentils. A quick dish that brings tropical flavors to your kitchen.Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 250 g okra- 400 g new potatoes
- 200 g red lentils
- 1 onion
- 2 garlic cloves
- 1 tbsp curry powder
- 400 ml coconut milk
- 2 tbsp oil
- Salt to taste
- Black pepper to taste
- Fresh coriander for garnish
Instructions:
1. Rinse the lentils and cook them in salted water for about 15 minutes until soft. Drain and set aside.2. Wash and peel the new potatoes. Cut them into small cubes.
3. Heat oil in a large pan and add chopped onion. Sauté until the onion is soft.
4. Add crushed garlic cloves and curry powder. Cook for another minute.
5. Add the potato cubes to the pan and sauté for a few minutes.
6. Slice the okra thinly and add it to the pan. Sauté for an additional 5 minutes.
7. Pour the coconut milk into the pan and stir in the cooked lentils. Let it simmer on low heat for about 10 minutes, until the potatoes are tender.
8. Season with salt and black pepper to taste. Garnish with fresh coriander before serving.
