Serving Size: 4-6 servings
Ingredients:
- 2 dl rice or wheat flour - 1 dl coconut milk
- 2 dl water
- 1 tsp salt
- 1 tsp sugar
- 200 g shrimp, peeled and deveined
- 1 dl chopped cilantro
- 1 dl green onions, chopped
- 1 red chili (optional)
- 2 tbsp oil for frying
- Lime wedges for serving
Instructions:
1. In a bowl, mix together the rice or wheat flour, coconut milk, water, salt, and sugar. Let the batter rest for about 10 minutes. 2. Prepare the shrimp and chop the cilantro, green onions, and chili.
3. Heat the oil in a frying pan over medium heat. Pour the batter into the pan, spreading it to cover the bottom.
4. Add the shrimp, cilantro, green onions, and chili on top of the batter.
5. Cook until the edges of the pancake are golden brown and the center is cooked, about 4-5 minutes.
6. Carefully flip the pancake and cook the other side until it is nicely browned.
7. Serve with lime wedges.
