*Warm and comforting sausage soup perfect for cold days*
Preparation Time: 30 minutes
Serving Size: 4-6 servings
Ingredients:
- 12 potatoes
- 1 package of mixed root vegetables
- 1 onion
- 1 teaspoon salt
- 5-7 allspice berries
- 1-2 packages of light sausages
- Fresh parsley
- Fresh dill
Instructions:
1. Peel and dice the potatoes into small cubes.
2. Peel and chop the onion.
3. Heat a bit of oil in a pot and add the onion. Sauté the onion for a few minutes until translucent.
4. Add the diced potatoes, mixed root vegetables, and allspice berries to the pot. Stir well.
5. Pour in enough water to cover the ingredients and add the salt.
6. Bring to a boil and then simmer over medium heat for about 15-20 minutes, until the potatoes are tender.
7. Slice the sausages and add them to the soup. Cook for an additional 5 minutes.
8. Taste and adjust seasoning with more salt if necessary.
9. Serve the soup topped with freshly chopped parsley and dill.
