Ingredients:
- 400 g spaghetti - 150 g bacon or guanciale
- 3 eggs
- 100 g Parmesan cheese (grated)
- 2 garlic cloves (minced)
- Salt and black pepper to taste
- Fresh parsley (for garnish, optional)
Instructions:
1. Cook the spaghetti in salted water according to the package instructions until al dente.2. Cut the bacon into small pieces and fry it in a skillet over medium heat until crispy. Add the minced garlic to the skillet and sauté for an additional minute.
3. In a bowl, whisk together the eggs and grated Parmesan cheese. Season with salt and black pepper to taste.
4. Once the pasta is cooked, drain it, saving a bit of the cooking water. Add the pasta to the bacon mixture in the skillet and mix well.
5. Remove the skillet from heat and quickly add the egg mixture to the pasta, stirring rapidly to prevent the eggs from scrambling. If needed, add a little reserved pasta water to make the sauce creamy.
6. Serve immediately, garnished with fresh parsley if desired.
