Winter Potato Salad

A hearty and refreshing winter potato salad with fennel, chickpeas, and kale, perfect for a healthy side dish. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 600 g potatoes
- 1 fennel bulb
- 1 can chickpeas
- 2 tbsp olive oil
- 150 g kale
- 2 tbsp tahini
- Juice of 1 lemon
- Salt and pepper to taste
Instructions:
1. Peel and boil the potatoes in salted water until tender. Drain and let cool.
2. Slice the fennel thinly and sauté in olive oil until soft and slightly browned.
3. Rinse the chickpeas and add them to the pan with the fennel. Cook for a few more minutes.
4. Chop the kale into small pieces and mix tahini, lemon juice, salt, and pepper to make a dressing. Combine with the kale.
5. Cube the cooled potatoes and add them to the fennel and chickpea mixture. Gently stir to combine.
6. Serve the potato salad on a bed of kale and enjoy!
