A hearty and flavorful sausage soup with a Tex-Mex twist.

Ingredients

- 1 (200 g) package frozen corn
- ½ tsp thyme
- 2 tbsp tomato paste
- 1 tbsp oil
- 4-5 tbsp creamy processed cheese
- 300-400 g sausages
- 1 onion or 1 cup frozen onion
- 2 (250 g) packages frozen vegetable strips
- 8 cups chicken or beef broth
- Parsley
- 1 tbsp mild chili powder
- A bit of spicy salsa or ketchup

Instructions

1. Peel and chop the onion.
2. Heat the oil in a pot and add the onion. Sauté until soft.
3. Add the sausages and cook for a moment.
4. Stir in the frozen corn, vegetable strips, tomato paste, thyme, chili powder, and broth. Mix well.
5. Let the soup simmer for about 10-15 minutes until the vegetables are tender.
6. Add the processed cheese and stir until melted into the soup.
7. Serve the soup garnished with parsley and optionally with salsa or ketchup.
