Ingredients:
- 300 g pasta (e.g., spaghetti or fusilli)
- 2 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 red bell pepper, diced
- 1 zucchini, sliced
- 200 g cherry tomatoes, halved
- 150 g spinach
- 1 tsp dried oregano
- Salt and pepper to taste
- Parmesan cheese (optional)
Instructions:
1. Cook the pasta according to the package instructions in salted water. Drain and set aside, reserving a little cooking water.
2. Heat the olive oil in a large skillet over medium heat. Add the onion and garlic, sauté until soft.
3. Add the bell pepper and zucchini, cooking for about 5 minutes until the vegetables are slightly softened.
4. Stir in the cherry tomatoes and spinach. Cook for a few more minutes until the spinach has wilted.
5. Mix the cooked pasta into the vegetable mixture. If needed, add a bit of the reserved cooking water to keep it moist. Season with oregano, salt, and pepper.
6. Serve immediately, adding grated Parmesan cheese on top if desired.
