Serving Size: 4 servings
Ingredients:
- 1 tbsp oil
- 1 onion, finely chopped
- 2 carrots, diced
- 2 potatoes, diced
- 1 zucchini, diced
- 1 bell pepper, diced
- 4 dl water
- 2-3 Japanese curry cubes
- 1 dl coconut milk (optional)
- Salt and pepper to taste
- Fresh cilantro or parsley for garnish
Instructions:
1. Heat the oil in a large pot over medium heat. Add the chopped onion and sauté until soft.
2. Add the carrots, potatoes, and zucchini. Cook for a few minutes until the vegetables start to soften.
3. Add the bell pepper and water to the pot. Bring to a boil, then reduce the heat. Let it simmer for about 15-20 minutes until all the vegetables are tender.
4. Stir in the curry cubes until they dissolve. If desired, add the coconut milk for a creamier texture.
5. Season with salt and pepper to taste. Let the soup simmer for a few more minutes.
6. Serve hot, garnished with fresh cilantro or parsley.
