Ingredients:
- 3 dl grated carrots
- 2 dl sugar
- 1 dl brown sugar
- 1 dl oil
- 3 eggs
- 2 dl all-purpose flour
- 1 dl almond flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp cinnamon
- ½ tsp nutmeg
- ½ tsp salt
- 100 g nuts (e.g., walnuts or pecans)
Instructions:
1. Preheat the oven to 175°C (350°F). Grease and flour a cake pan.
2. In a large bowl, mix the grated carrots, sugars, oil, and eggs.
3. Add the all-purpose flour, almond flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Mix well.
4. Gently fold in the nuts into the batter.
5. Pour the batter into the prepared cake pan and smooth the top.
6. Bake in the oven for about 40-50 minutes, or until the cake is cooked through. Check for doneness with a toothpick.
7. Allow the cake to cool before serving. Optionally, you can frost it with cream cheese icing.
