Simple Carrot Cake

Serving Size: 8-10 servings
Ingredients:
- 3 dl grated carrots
- 2 dl sugar
- 1 dl vegetable oil
- 3 eggs
- 2 dl all-purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp cinnamon
- 0.5 tsp nutmeg
- 0.5 tsp salt
- 1 dl chopped nuts (optional)
Instructions:
1. Preheat the oven to 175°C (350°F). Grease and flour a cake pan.
2. Grate the carrots finely and place them in a large bowl.
3. Add sugar and vegetable oil to the grated carrots and mix well.
4. Crack the eggs into the mixture and stir until smooth.
5. In another bowl, combine the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
6. Gradually add the dry ingredients to the carrot mixture and mix until well combined.
7. If using nuts, fold them into the batter gently.
8. Pour the batter into the prepared cake pan and smooth the surface.
9. Bake in the oven for 30-40 minutes, or until the cake is golden brown and cooked through (check with a toothpick).
10. Allow the cake to cool before serving.
