A deliciously moist carrot cake with a hint of spice, topped with a creamy white chocolate frosting and crunchy roasted nuts. Perfect for any occasion!

Ingredients:
- 3 medium carrots, grated
- 1 cup sugar
- ½ cup canola oil
- 3 eggs
- 1 cup all-purpose flour
- ½ cup almond flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp cinnamon
- ½ tsp nutmeg
- ½ tsp salt
- 5.3 oz white chocolate
- ⅓ cup cream
- ⅓ cup roasted nuts, chopped
Instructions:
1. Preheat the oven to 350°F (175°C) and grease a cake pan.
2. In a bowl, mix sugar, oil, and eggs. Add grated carrots and stir well.
3. In another bowl, combine all-purpose flour, almond flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
4. Add the dry ingredients to the carrot mixture and mix until smooth.
5. Pour the batter into the prepared cake pan and bake for about 30-35 minutes, or until a toothpick comes out clean.
6. Melt the white chocolate and mix in the cream until smooth. Allow to cool.
7. Once the cake is cooled, spread the white chocolate frosting on top and garnish with chopped roasted nuts.
8. Let the cake chill in the fridge before serving.
