A deliciously moist carrot cake, perfect for any occasion.

Serving Size: 8-10 slices
Ingredients:
- 3 medium carrots (grated)
- 1 cup granulated sugar
- 1/2 cup vegetable oil
- 3 eggs
- 1 cup gluten-free flour blend (or regular flour)
- 1 tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp salt
- 1/2 cup nuts (chopped, optional)
- 1/2 cup raisins (optional)
Instructions:
1. Preheat the oven to 350°F (175°C). Grease a cake pan.
2. Grate the carrots finely.
3. In a bowl, mix together the sugar, oil, and eggs. Whisk well.
4. Add the grated carrots and mix until combined.
5. In another bowl, combine the dry ingredients: flour, baking powder, cinnamon, and salt.
6. Gradually add the dry mixture to the wet mixture and stir until smooth.
7. If using, fold in the chopped nuts and raisins.
8. Pour the batter into the prepared cake pan.
9. Bake in the oven for about 30-35 minutes, or until a toothpick comes out clean.
10. Allow to cool before serving.
