A delicious and moist carrot cake perfect for any occasion.

Ingredients:
- 3 dl sugar
- 2 dl vegetable oil
- 4 eggs
- 4 dl finely grated carrots
- 3 dl all-purpose flour
- 2 tsp baking powder
- 1 tsp baking soda
- 2 tsp cinnamon
- 1 tsp vanilla sugar
- 1 dl nuts (optional)
- 1 dl raisins (optional)
Instructions:
1. Preheat the oven to 175°C (350°F). Grease and flour a cake pan.
2. In a large bowl, mix together the sugar and vegetable oil. Add the eggs one at a time, mixing well after each addition.
3. Stir in the grated carrots until well combined.
4. In another bowl, combine the flour, baking powder, baking soda, cinnamon, and vanilla sugar.
5. Gradually add the dry ingredients to the carrot mixture, stirring until just combined. If desired, fold in the nuts and raisins.
6. Pour the batter into the prepared cake pan and bake in the oven for about 40-50 minutes or until a toothpick inserted into the center comes out clean.
7. Allow the cake to cool before serving. Enjoy your delicious carrot cake!
