Ingredients:
- 4 large eggs
- 3 dl sugar
- 1.5 tsp lemon juice
- 1.25-1.5 tbsp cinnamon
- 1 tsp cardamom
- 3 large carrots, grated
- 2 dl all-purpose flour
- 1 dl oil
- 1 tsp baking powder
- 0.5 tsp salt
- (optional: nuts or raisins)
Instructions:
1. Preheat the oven to 175°C (350°F).
2. In a bowl, crack the eggs and add the sugar. Whisk until the mixture is light and fluffy.
3. Add the lemon juice, oil, grated carrots, cinnamon, and cardamom. Mix well.
4. In a separate bowl, combine the flour, baking powder, and salt. Gradually add the dry ingredients to the egg-sugar mixture and stir until smooth.
5. If using nuts or raisins, fold them in at this stage.
6. Pour the batter into a greased cake pan.
7. Bake in the oven for about 30-40 minutes, or until the cake is cooked through (test with a toothpick).
8. Allow the cake to cool before serving.
