A comforting and flavorful garlic soup perfect for chilly days.

Ingredients:
- 6 garlic cloves
- 2 potatoes
- 2 carrots
- 1 celery stalk
- 1 onion
- 1 liter vegetable broth
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
1. Peel and chop the garlic cloves, potatoes, carrots, celery, and onion.
2. Heat the olive oil in a pot over medium heat. Add the onion and garlic, sauté for about 5 minutes until fragrant.
3. Add the chopped vegetables to the pot and cook for a few more minutes.
4. Pour the vegetable broth into the pot and bring to a boil. Reduce the heat and let the soup simmer for about 20-25 minutes, until the vegetables are tender.
5. Blend the soup with an immersion blender or in a blender until smooth.
6. Season with salt and pepper to taste.
7. Serve hot and garnish with fresh parsley.
