Winter Vegetable Soup

A hearty and healthy vegetable soup perfect for warming up during cold days. Preparation Time: 50 minutes
Serving Size: 4 servings
Ingredients:
- 1 piece of rutabaga
- 1 bulb of fennel
- 1 splash of white wine
- 1 leek
- 2 cloves of garlic
- 1 piece of celery
- 1 can of crushed tomatoes
- 1 piece of parsnip
- Salt
- Mediterranean spice blend
- Pepper mix
- 1 bay leaf
- 1 potato
- 1 piece of vegetable stock
- 1 onion
- 3 carrots
- 2 liters of water
- Fresh parsley
Instructions:
1. Peel and dice all the vegetables into small cubes.
2. In a pot, heat a splash of white wine and add the diced onions, garlic, and leek. Sauté until soft.
3. Add the rutabaga, fennel, celery, parsnip, potato, and carrots to the pot. Stir and sauté briefly.
4. Add the crushed tomatoes, bay leaf, and seasoning (salt, Mediterranean spice blend, pepper mix).
5. Pour in 2 liters of water and add the vegetable stock. Bring to a boil.
6. Reduce the heat and let the soup simmer on low for about 30-40 minutes, until the vegetables are tender.
7. Remove the bay leaf and taste. Adjust seasoning with salt or spices if needed.
8. Serve the soup fresh, garnished with chopped parsley.
