A delicious and refreshing dish perfect for summer days or picnic lunches. This recipe is easy to make and takes about 30 minutes. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 250 g pasta (such as fusilli or penne) - 1 bell pepper (red or yellow)
- 1 cucumber
- 200 g cherry tomatoes
- 100 g feta cheese
- 100 g black olives
- 100 ml olive oil
- 2 tbsp balsamic vinegar
- Salt and pepper to taste
- Fresh basil or parsley (optional)
Instructions:
1. Cook the pasta according to package instructions in salted water. Drain and cool. 2. Chop the bell pepper, cucumber, and cherry tomatoes into small pieces.
3. Crumble the feta cheese and slice the olives.
4. Combine all ingredients in a large bowl.
5. Prepare the dressing by mixing olive oil, balsamic vinegar, salt, and pepper.
6. Pour the dressing over the salad and mix well.
7. Garnish with fresh basil or parsley if desired.
8. Serve immediately or allow to marinate in the refrigerator before serving.
