A savory halloumi salad combining crunchy pine nuts and tangy sumac with fresh greens. Easy to prepare and perfect for summer gatherings or as a side to grilled dishes.

Serving Size: 2-4 servings

Ingredients:

- Approximately 300 g cucumber
- 1 green onion
- 1 stalk of celery
- ½ green bell pepper
- 1 handful of basil
- A small handful of mint
- (½ green chili, optional)
- Approximately 1 tsp honey
- Drizzle of olive oil
- Juice of one lemon or lime
- Sumac
- Black pepper
- Salt
- 100 g halloumi cheese
- 2 tbsp pine nuts

Instructions:

1. Toast the pine nuts in a hot, dry pan and set aside.
2. Cut the halloumi into cubes and soak in cold water.
3. Chop all vegetables into small pieces and finely chop the herbs.
4. Prepare the dressing by combining honey, olive oil, lemon or lime juice, sumac, salt, and pepper.
5. Mix the vegetables and herbs together in a bowl, then pour the dressing over them. Let it sit for a moment to marinate.
6. Drain the halloumi and pat dry with a paper towel.
7. Sauté the halloumi cubes in a hot, dry pan until the cheese is beautifully browned. Let it cool for a moment.
8. Assemble the salad and sprinkle with additional sumac and herbs on top.
9. Serve immediately.
