Ingredients:
- 1 zucchini
- 2 slices of rustic mixed bread
- 1 tablespoon olive oil
- 1 tomato
- 1 teaspoon black pepper
- 1 shallot
- 150 g light halloumi cheese
- Fresh basil for garnish
Instructions:
1. Slice the zucchini and halloumi into thick pieces.
2. Heat the olive oil in a pan and grill the zucchini slices and halloumi until golden brown.
3. Slice the tomato into rounds.
4. Arrange the grilled zucchini and halloumi alternately with the tomato slices on a plate.
5. Grind black pepper over the top and drizzle a bit of olive oil.
6. Add rings of shallot and garnish with fresh basil.
