Ingredients:

- Carrot Fritters:
- 1 liter coarsely grated carrots
- 4 eggs
- 100 ml cream
- 200 g good quality feta cheese
- 200 g all-purpose flour
- Fresh mint
- Black pepper
- Salt
- Tzatziki:
- 1 cucumber
- 200 ml yogurt
- 2 garlic cloves
- Salt
- Black pepper
- Fresh dill (optional)
- Halloumi-Melon Salad:
- Arugula
- 200 g halloumi cheese
- 1 cantaloupe melon
- 1 tbsp honey
- 2 tbsp white wine vinegar or light balsamic vinegar
- 2 tbsp olive oil
- Black pepper
- Salt

Instructions:

1. Carrot Fritters:
- In a bowl, mix all ingredients for the carrot fritters. Allow to rest for a moment.
- Cook the fritters in a small frying pan over medium heat until golden brown.
2. Tzatziki:
- Grate the cucumber and squeeze out excess moisture.
- Combine cucumber with yogurt, crushed garlic, salt, pepper, and dill. Let it chill in the refrigerator before serving.
3. Halloumi-Melon Salad:
- Cut halloumi into cubes and fry in a pan until golden brown.
- Cube the cantaloupe melon.
- Tear arugula into a salad bowl, add melon cubes and cooled halloumi.
- Mix the dressing with honey, vinegar, oil, salt, and pepper. Drizzle over the salad and toss well.
4. Serve the warm carrot fritters with tzatziki and enjoy with the halloumi-melon salad.
