A delicious vegan potato casserole combining tender potatoes and flavorful spices, creating the perfect comfort food classic in a vegan style.

Serving Size: 4-6 servings
Ingredients:
- 1 kg potatoes
- 2 dl oat cream
- 1 dl vegetable broth
- 1 onion
- 2 garlic cloves
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika powder
- 1/2 tsp dried thyme
- 1 tbsp olive oil
- 2 tbsp fresh parsley (optional)
Instructions:
1. Peel and slice the potatoes into thin rounds.
2. Peel and finely chop the onion and garlic.
3. Heat the olive oil in a frying pan, then add the onion and garlic. Sauté until softened.
4. In a bowl, mix together the oat cream, vegetable broth, salt, black pepper, paprika powder, and thyme.
5. Grease a baking dish and layer the bottom with a layer of potato slices. Add some of the onion mixture and the oat cream mixture on top. Continue layering until all ingredients are used.
6. Cover the dish with foil and bake at 180°C (350°F) for about 40 minutes.
7. Remove the foil and bake for an additional 10-15 minutes until the top is beautifully golden brown.
8. Let cool slightly before serving, and sprinkle with fresh parsley if desired.
