Bring the warmth of Southern France to your table with this rustic and flavorful beef stew. Preparation Time: 2 hours
Serving Size: 4-6 servings
Ingredients:
- 800 g beef (such as shank or chuck)
- 2 tbsp olive oil
- 2 onions
- 3 garlic cloves
- 3-4 carrots
- 2-3 potatoes
- 1 can crushed tomatoes
- 2 dl red wine
- 2 dl beef broth
- 2-3 sprigs fresh rosemary
- 2-3 sprigs fresh thyme
- Salt and black pepper to taste
Instructions:
1. Cut the beef into bite-sized cubes. Heat the olive oil in a large pot and brown the beef thoroughly.
2. Peel and chop the onions and garlic. Add them to the pot and sauté until the onions are soft.
3. Peel and slice the carrots and potatoes. Add them to the pot and stir.
4. Pour in the crushed tomatoes, red wine, and beef broth. Add the rosemary and thyme.
5. Season with salt and pepper. Let the stew simmer on low heat for about 1.5 hours or until the meat is tender.
6. Serve warm, ideally with fresh bread.
