Ingredients:

- Sauce:
- 2 tablespoons rice vinegar
- 2 tablespoons honey
- 2 tablespoons canola oil
- 2-3 teaspoons fish sauce (nam pla) or soy sauce
- About ¾ cup unsalted peanuts (or 2 tablespoons peanut butter)
- 1 small garlic clove
- 1 cm x 1 cm piece of fresh ginger
- A pinch of salt
- For Grilling:
- 1 large or 2 small bok choy
- Peanuts for garnish

Instructions:

1. First, prepare the sauce. Measure all the sauce ingredients into a blender and blend until smooth or slightly chunky. Set aside to let the flavors meld while grilling the bok choy.
2. Cut the bok choy lengthwise in half or into quarters.
3. Grill the bok choy on a hot grill or grill pan for about two minutes on each side, until tender but still crisp.
4. Drizzle some of the sauce over the hot bok choy and serve the remaining sauce on the side.
5. Sprinkle whole or chopped peanuts over the grilled bok choy for garnish.
