Ingredients:
- 2 live lobsters
- Salt
- 100 ml butter
- 1 onion
- 100 ml white wine
- 100 ml cream
- Salt and pepper to taste
- 2 egg yolks
Instructions:
1. Boil the live lobsters in salted boiling water for 3-5 minutes, depending on their size. Cool them down.
2. Split the lobsters in half and carefully remove the meat.
3. Finely chop the onion and sauté it in butter in a pan until soft.
4. Add white wine and cream. Season with salt and pepper.
5. Cook the mixture for 15 minutes and whisk in the egg yolks.
6. Add the chopped lobster meat to the mixture and stir well.
7. Fill the lobster halves with the mixture and gratinée on the grill or under the broiler until golden brown.
8. Serve the lobster as an appetizer for a seafood meal.
