Pomegranate Sima

A refreshing fermented drink made with pomegranate, lime, and a hint of rosemary. Preparation Time: 30 minutes (plus 24 hours fermentation)
Serving Size: 4 servings
Ingredients:
- 1 liter water
- 200 g sugar
- 100 g brown sugar
- 1 pomegranate
- 1 lime
- 1/2 tsp yeast
- Fresh rosemary leaves (optional)
Instructions:
1. Boil the water and stir in the sugars until fully dissolved.
2. Allow the sugar water to cool to room temperature.
3. Squeeze the juice from the lime and add it to the water.
4. Halve the pomegranate and extract the seeds. Add the seeds to the sugar water.
5. Mix in the yeast and stir well.
6. Pour the mixture into a clean bottle or container, adding rosemary leaves if desired.
7. Cover the container with a cloth and let it ferment at room temperature for about 24 hours.
8. Bottle the sima and place it in the refrigerator. Chill before serving.
