Sima (Finnish Lemonade)

A refreshing and traditional Finnish lemonade perfect for summer days. Prepare it in advance and enjoy its bubbly flavor! Preparation Time: 5 days
Serving Size: About 2 liters
Ingredients:
- 3 lemons - 500 g sugar
- 100 g raisins
- 1 dl fresh yeast or 1 packet dry yeast
- 2 liters water
Instructions:
1. Wash the lemons thoroughly and peel them thinly with a potato peeler. Remove the white pith and slice the fruit. 2. Place the lemon peels, slices, and sugar in a large bowl.
3. Heat half of the water to boiling and pour it over the lemons and sugar.
4. Dissolve the fresh yeast in a deciliter of the liquid and mix it with the other ingredients. If using dry yeast, sprinkle it on the surface of the mixture and stir it in after a moment.
5. Allow the mixture to ferment at room temperature until the next day.
6. Strain and bottle the sima. Add a few raisins and a sprinkle of sugar to the bottom of each bottle.
7. Seal the bottles tightly and let the sima ferment in a cool place for about five days. It’s ready when the raisins have floated to the top.
