A traditional Finnish lemonade, particularly popular during May Day celebrations. This sweet and refreshing drink is easy to make and enjoyed by the whole family. Preparation Time: 24 hours
Serving Size: Approximately 2 liters
Ingredients
- 4 liters of water - 3 dl sugar
- 3 dl brown sugar
- 2 lemons
- ½ tsp yeast
- For bottling: raisins, sugar
Instructions
1. Boil water in a pot and add both types of sugar. Stir until the sugar is completely dissolved. 2. Remove the pot from heat and add sliced lemons.
3. Allow the mixture to cool to room temperature.
4. Add yeast and stir well. Let the mixture ferment at room temperature for about 24 hours.
5. Once fermentation is complete, bottle the sima in cleaned bottles, adding a few raisins and a teaspoon of sugar to each bottle.
6. Seal the bottles tightly and place them in the refrigerator. Sima will be ready to enjoy in about 2-3 days.
