Sima (Finnish Lemonade)

Sima is a traditional Finnish lemonade that is lightly fermented and refreshing, perfect for warm days or celebrations.
Ingredients:
- 8 liters of water- 5 dl brown sugar
- 6 dl white sugar
- 1/4 tsp dry yeast (or a small piece of fresh yeast)
- 2 lemons, sliced
Instructions:
1. Boil a few liters of water and pour it over the sugars in a large bowl. Stir until the sugars dissolve completely.2. Add the remaining cold water to the bowl.
3. In a small cup, take a bit of the lukewarm sima, dissolve the yeast in it, and then pour it back into the large bowl.
4. Add the sliced lemons into the bowl.
5. Allow the sima to ferment at room temperature for about 24 hours.
6. Bottle the sima, adding 1 teaspoon of sugar and a few raisins to each bottle.
7. Store the bottles in the refrigerator or let them continue to ferment at room temperature.
Sima is ready when the raisins have floated to the top. Enjoy!
