Serving Size: 4 servings
Ingredients:
- 1 liter chicken broth
- 2 carrots, diced
- 1 celery stalk, chopped
- 1 onion, chopped
- 2 garlic cloves, crushed
- 1 tsp fresh ginger, grated
- 100 g rice
- 200 g chicken breast, diced
- 1 tsp salt
- ½ tsp black pepper
- 1 tbsp fresh parsley, chopped
Instructions:
1. Heat the chicken broth in a pot and add the diced carrots, chopped celery, and chopped onion. Cook for about 10 minutes.
2. Add the crushed garlic and grated ginger. Let it simmer for another 5 minutes.
3. Stir in the rice and diced chicken breast. Cook for about 10-15 minutes, until the rice and chicken are cooked through.
4. Season with salt and black pepper. Mix in the fresh parsley just before serving.
5. Serve hot and enjoy the healthy ingredients!
