A refreshing and delicious green salad, perfect as a side for summer meals or a light lunch. Preparation Time: 15 minutes
Serving Size: 4 servings
Ingredients:
- 150 g fresh spinach
- 100 g arugula
- 1 avocado
- 200 g cherry tomatoes
- 1 cucumber
- 50 g feta cheese
- 30 g pine nuts
- 3 tbsp olive oil
- 1 tbsp balsamic vinegar
- Salt and pepper to taste
Instructions:
1. Rinse the spinach and arugula thoroughly and dry them.
2. Cut the avocado in half, remove the pit, and slice the fruit.
3. Halve the cherry tomatoes and slice the cucumber.
4. Combine all the vegetables in a large bowl.
5. Add crumbled feta cheese and toasted pine nuts.
6. Prepare the dressing by mixing olive oil, balsamic vinegar, salt, and pepper.
7. Pour the dressing over the salad and toss gently.
8. Serve immediately and enjoy!
