Serving Size: 4 servings
Ingredients:
- 500 g chicken breasts
- 1 dl olive oil
- 2 tablespoons lemon juice
- 3 garlic cloves, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1 dl fresh herbs (e.g., basil, parsley)
- 4 zucchini
- 500 g potatoes
- 1 dl grated cheese (e.g., mozzarella)
Instructions:
1. Marinate the chicken breasts in olive oil, lemon juice, minced garlic, salt, black pepper, and paprika for at least 30 minutes.
2. Peel and chop the potatoes. Boil them in salted water for about 10 minutes, until slightly tender. Drain and set aside.
3. Slice the zucchinis and grill them in a pan for a few minutes on each side.
4. Grill the marinated chicken breasts over medium heat for about 6-7 minutes on each side or until cooked through.
5. In a bowl, mix the boiled potatoes, grilled zucchinis, and chopped fresh herbs. Season with salt and pepper if needed.
6. Serve the grilled chicken with the vegetable salad and sprinkle grated cheese on top.
