Inspired by the flavors of the Turku Food & Wine Festival, this dish is perfect for summer celebrations or gatherings. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 400 g fresh salmon fillet
- 2 tbsp olive oil
- 1 lemon (juice and zest)
- 1 tsp salt
- 1/2 tsp black pepper
- 200 g cherry tomatoes
- 100 g fresh basil
- 150 g mozzarella cheese
- 1 tbsp balsamic vinegar
Instructions:
1. Preheat the oven to 200°C (392°F).
2. Place the salmon fillets on a baking sheet lined with parchment paper.
3. In a bowl, mix the olive oil, lemon juice, lemon zest, salt, and black pepper. Pour the mixture over the salmon fillets.
4. Halve the cherry tomatoes and scatter them around the salmon.
5. Bake in the oven for about 15-20 minutes, until the salmon is cooked through and the tomatoes have softened.
6. Remove from the oven and add pieces of mozzarella and fresh basil on top.
7. Drizzle balsamic vinegar over the dish before serving.
