A delicious and hearty stew inspired by Balkan cuisine, perfect for warming up autumn evenings with family or friends. Preparation Time: 1 hour
Serving Size: 4-6 servings
Ingredients:
- 500 g beef (cut into pieces) - 2 tbsp olive oil
- 1 large onion (chopped)
- 2 garlic cloves (minced)
- 2 carrots (sliced)
- 1 bell pepper (diced)
- 400 g crushed tomatoes
- 2 dl beef broth
- 1 tbsp paprika powder
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp dried oregano
- 1/2 tsp bay leaf
- Fresh parsley for garnish
Instructions:
1. Heat the olive oil in a large pot over medium heat. Add the onions and garlic, sautéing until softened.2. Add the beef pieces to the pot and brown them on all sides.
3. Add the carrots and bell pepper, cooking for a few more minutes.
4. Pour in the crushed tomatoes and beef broth. Add the paprika powder, salt, black pepper, oregano, and bay leaf.
5. Stir all the ingredients well and let the stew simmer on low heat for about 30-40 minutes, until the meat is tender.
6. Remove the bay leaf before serving and garnish with fresh parsley.
