A delicious feta omelette perfect for breakfast or a light lunch. Easy to prepare, it offers a tasty combination of feta cheese, vegetables, and eggs.

Serving Size: 2 servings
Ingredients:
- 0.5 dl feta cheese cubes (3% fat, such as Arla Apetina)
- 1 bell pepper
- 0.5 dl coarsely grated zucchini
- 0.25 tsp black pepper
- 2 eggs
- 0.25 tsp salt
- 5 cherry tomatoes
- 1 dl water
Instructions:
1. In a bowl, whisk the eggs until well combined.
2. Add water, salt, and the coarsely grated zucchini to the egg mixture. Mix well.
3. Wash and halve the cherry tomatoes. Slice the bell pepper and drain the feta cubes.
4. Heat a frying pan and pour the egg mixture into the pan.
5. Top the mixture with the bell pepper, tomatoes, and feta cubes.
6. Cook on low heat until the omelette is set and has a nice color.
7. Serve immediately while warm.
