A delicious feta spinach pie that's perfect for a light meal or a party treat. Preparation time is about 1 hour. Serves 6.
Ingredients:
- 150 g butter
- 2 ½ dl all-purpose flour
- 3 tbsp water
- 1 dl grated cheese
Filling:
- 2 eggs
- 2 dl cream
- 200 g frozen spinach (thawed)
- 150 g feta cheese
- Salt and pepper to taste
Instructions:
1. Prepare the crust: Melt the butter and mix it with the all-purpose flour and water. Knead the dough until smooth and press it into a pie dish.
2. Pre-bake the crust at 180°C (350°F) for about 10 minutes.
3. Prepare the filling: Whisk the eggs and mix in the cream, thawed spinach, crumbled feta cheese, and season with salt and pepper.
4. Pour the filling over the pre-baked crust.
5. Sprinkle the grated cheese on top of the filling.
6. Bake the pie at 180°C (350°F) for about 30-35 minutes, until the top is beautifully golden brown.
7. Allow the pie to cool slightly before serving.
