Feta Potato Salad

A refreshing and delicious feta potato salad that takes you on a taste journey to Greece. This recipe is perfect as a side dish for summer BBQs or as a light meal companion. Preparation Time: 30 minutes

Ingredients:
- 800 g new potatoes - 200 g feta cheese
- 2 tbsp olive oil
- Juice of 1 lemon
- 1 clove garlic, crushed
- 1 dl fresh parsley, chopped
- Salt and pepper to taste
Instructions:
1. Boil the new potatoes in salted water until cooked. Drain and let cool slightly. 2. Cut the cooled potatoes in half or quarters.
3. In a bowl, mix olive oil, lemon juice, crushed garlic, salt, and pepper.
4. Add the potatoes to the oil mixture and stir well.
5. Crumble feta cheese over the potatoes and add chopped parsley.
6. Gently mix to combine, taking care not to break the feta too much.
7. Serve immediately while warm or let it sit for a moment before serving.
