Serving Size: 4 servings
Ingredients:
- 300 g pasta (e.g., fusilli or penne)
- 2 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 1 red bell pepper, diced
- 200 g cherry tomatoes, halved
- 150 g fresh spinach
- 100 g feta cheese, crumbled
- Salt and pepper to taste
- Fresh basil for garnish
Instructions:
1. Cook the pasta according to package instructions in salted water until al dente. Drain and reserve a bit of the cooking water.
2. Heat olive oil in a large skillet over medium heat. Add onion and garlic, and sauté until softened.
3. Add bell pepper and cherry tomatoes, and cook for a few minutes until the tomatoes begin to soften.
4. Stir in the cooked pasta and spinach. Mix well and heat until the spinach is wilted.
5. If necessary, add a little reserved pasta water to keep the mixture moist. Season with salt and pepper.
6. Remove the skillet from heat and fold in the feta cheese. Mix gently.
7. Serve warm and garnish with fresh basil.
