Ingredients:
- 200 g pasta (spaghetti or fettuccine)
- 100 g bacon or pancetta
- 2 egg yolks
- 50 g Parmesan cheese (grated)
- 1 garlic clove (minced)
- Salt to taste
- Black pepper to taste
- Fresh parsley (for garnish)
Instructions:
1. Cook the pasta in salted boiling water according to package instructions until al dente.
2. While the pasta cooks, fry the bacon or pancetta in a pan over medium heat until crispy. Add the minced garlic and sauté for an additional minute.
3. Once the pasta is cooked, reserve about 1 cup of the cooking water, then drain the pasta.
4. Combine the pasta in the pan with the bacon and garlic. Remove the pan from heat.
5. In a bowl, mix together the egg yolks, grated Parmesan cheese, and a splash of reserved pasta water until smooth.
6. Pour the egg mixture over the pasta and swiftly mix to prevent the eggs from scrambling.
7. Add more reserved pasta water if needed to achieve a creamy consistency.
8. Season with salt and black pepper. Serve immediately, garnished with fresh parsley.
