Ingredients:
- 200 g pasta (e.g., spaghetti)
- 100 g bacon or pancetta
- 2 eggs
- 50 g Parmesan cheese (grated)
- 2 garlic cloves (chopped)
- Salt
- Black pepper
- Fresh parsley (for garnish)
Instructions:
1. Cook the pasta in salted water according to package instructions. Drain the pasta, reserving a little cooking water.
2. In a pan, cook the bacon or pancetta until golden brown. Add the chopped garlic and sauté for a moment.
3. In a bowl, whisk the eggs and mix in the grated Parmesan cheese. Season with salt and black pepper.
4. Add the drained pasta to the pan with the bacon and garlic. Mix well.
5. Remove the pan from heat and quickly add the egg mixture to the pasta, stirring rapidly to ensure the eggs cook without becoming scrambled. If needed, add a bit of reserved cooking water to create a creamy consistency.
6. Serve the pasta garnished with fresh parsley.
