Ingredients:
- 2 slices of whole grain bread
- 1 ripe avocado
- 1 tablespoon lemon juice
- Salt to taste
- Pepper to taste
- 2 cherry tomatoes
- Fresh basil (optional)
Instructions:
1. Lightly toast the bread slices until golden brown.
2. Cut the avocado in half and remove the pit. Scoop the flesh into a bowl.
3. Add lemon juice, salt, and pepper to the avocado. Mash the mixture with a fork until smooth.
4. Spread the avocado mixture evenly over the toasted bread.
5. Slice the cherry tomatoes and place them on top of the avocado.
6. Garnish with fresh basil if desired.
7. Serve immediately and enjoy!
