A refreshing and delicious Middle Eastern salad that combines fresh summer vegetables with toasted pita bread pieces. Perfect for a light lunch.
Preparation Time: 30 minutes
Serving Size: 2 people

Ingredients:

- 1 cucumber
- 3-4 ripe tomatoes
- 150 g radishes
- 3-4 green onion stalks (or small spring onions with green tops)
- 1 head romaine lettuce
- A handful of fresh mint, chopped
- A handful of fresh flat-leaf parsley, chopped
- 2-3 pita breads (about 15 cm in diameter)
Dressing:
- 2 tbsp sumac
- 2 tbsp pomegranate molasses
- Juice of 1 lemon
- 6 tbsp olive oil
- Black pepper
- Salt

Instructions:

1. Peel the cucumber, clean the radishes, and trim their ends. Rinse all the vegetables and let them dry to prevent the salad from becoming watery. Chop all the vegetables into a salad bowl.
2. Prepare the dressing by mixing all the dressing ingredients together, then pour it over the salad. Gently toss a few times.
3. Toast the pita bread pieces in a toaster or on a skillet until they are crispy and slightly colored, but not burnt. Mix the pieces into the salad and serve immediately.
