A refreshing and vibrant salad that combines fresh vegetables, pomegranate seeds, and crispy pita triangles. A great side dish or light main course!

Ingredients:
- 2 tomatoes
- 1 cucumber
- 1 bell pepper
- 2 green onions
- 1/2 cup fresh mint
- 1 lemon
- 4 tablespoons olive oil
- Salt to taste
- 1 pomegranate
- 2-3 pita breads
Instructions:
1. Dice the tomatoes, cucumber, and bell pepper into small cubes, slice the green onions, and chop the mint. Place the ingredients in a salad bowl and mix gently.
2. Wash the lemon thoroughly, zest it, and squeeze the juice. Add it to the salad mixture. Drizzle generously with olive oil and sprinkle with salt. Mix well.
3. Halve the pomegranate and tap the seeds over the salad.
4. Tear the pita into triangles and mix them into the salad just before serving.
