These tasty vegetable patties are a great meal option and are easy to prepare. They are perfect for both everyday dining and more festive occasions. Preparation Time: 30 minutes
Serving Size: 4 patties
Ingredients:
- 1 cup cooked chickpeas (or canned)- 1/2 cup rolled oats
- 1 small onion, finely chopped
- 1 garlic clove, crushed
- 1 carrot, grated
- 1/4 cup fresh parsley, finely chopped
- 1 tablespoon soy sauce
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 2 tablespoons oil for frying
Instructions:
1. Mash the chickpeas in a bowl with a fork until mostly smooth.2. Add the oats, onion, garlic, carrot, parsley, soy sauce, salt, black pepper, and paprika. Mix well.
3. Shape the mixture into four patties.
4. Heat the oil in a frying pan over medium heat.
5. Fry the patties for about 4-5 minutes on each side, until they are golden brown.
6. Serve the patties with a salad or dipping sauce of your choice.
